Our Melbourne Dry Gin is appropriately named after our hometown and where our distillery is. We spent years making, creating, refining our first gin. A process that seemed endless at the time but was obvious when it arrived. The result is a considered creation and a gin that is big, bold and complex, yet is incredibly smooth and balanced.

Our Melbourne Dry Gin will stand tall when you mix it. It makes an incredible G&T with ruby grapefruit. Or try a Negroni or Martini.
Tasting notes
Bright citrus of ruby grapefruit and fresh juniper are delicately balanced with subtle spice of aniseed myrtle, cubeb pepper, and tonka beans. Distilled in small batches in our German made Müller copper still. Bold, complex and aromatic. A perfectly balanced gin.

Summer Thyme Gin
Inspired by summer, for drinking all year round. Fresh thyme and lemons are vapour infused in our custom made Müller copper still to produce a lively gin bursting with lemon zest and delicate piney freshness. Best enjoyed poolside, in a hammock or on a rooftop.

Refreshing, zesty, fresh green notes. It makes a smashable G&T with lemon and fresh thyme, Tom Collins and Martini.
Tasting notes
Lemon zest and fresh green thyme gives us a slightly lighter, refreshing style gin. Bright, lively, and bursting with fresh lemon before moving to piney juniper, which is perfectly complimented by fresh thyme which offers fresh green notes. The palate leads to a light floral note, with juniper ever present, before finishing on a subtle sweetness from tonka beans.

Blackthorn Gin
Early Scottish settlers planted the Blackthorn bush, also known as Sloe, around northern Tasmania to create field boundaries and to bring a sense of home. Fresh sloe berries are handpicked once per year and sent to our distillery to be steeped in our Melbourne Dry Gin for five months, before lightly sweetening and releasing at 35%. Low sugar, big flavour, high ABV. This is how sloe gin should taste. Limited release 500ml bottles.
Serving Suggestions
Bright berry flavour and that colour will just pop in a glass! Refreshing, zesty, fresh green notes. Delicious just neat or on ice. Or if you are a G&T fan just add a dash of tonic or soda. Also works well in a sloe gin spritz or Charlie Chaplin.
Tasting notes
Bright grapefruit and berries are evident on the nose, leading to a palate packed full of sloe with a light touch of spice, before moving to herbaceous green juniper notes. There’s a slight floral underdone and straight back to sloe berries. Excellent palate length.

Pinot Noir Gin
Deeply perfumed with rich layers of cherry, raspberry and a hint of blueberry – the perfect blend of distilled botanicals and fresh Pinot Noir grapes.
Serving Suggestions
Pinot Noir Gin is vibrant, versatile and up for anything. Enjoy a juicy, fruit-driven G&T, or shake things up in a range of cocktails. According to our very own cocktail master, Blake Hall, “It makes perfect sense in a spritz, and anything with bubbles of course. Double down and garnish with a grape.”
Tasting notes
Natural sweetness with cherry and raspberry flavours, and a hint of spice that rounds out the finish. On the nose you’ll find stone fruit, cherry and violet.
